Carpaccio of asparagus

 

Ingredients:(for 2 people)

  • 2 extra asparagus

  • Extra virgin olive oil

  • Salt

  • Peperl

  • Lemon

  • Flaked Parmesan

 

Preparation:

 

  1. Peel and wash the asparagus.

  2. Slice them finely, if possible with the slicer, for the length.

  3. Whisk lemon juice, oil, salt and pepper.

  4. Place the asparagus in a container with lid.

  5. Cover them with a slam.

  6. Allow to macerate in a tightly closed refrigerator for 24 hours.

  7. Remove from the fridge a few hours before serving.

  8. Cover them lightly.

  9. Sprinkle with parmesan flakes.
